Hype can be a scary leang. The expectations set up a perfect storm of prescertain that can make even the best-laid plans crumble. Luckily, Seu Pizza Illuminati lives up to the excited anticipation.
The contemporary pizzeria recently opened in the Porta Portese area of Trastevere and it is oh-so-good.
The pizzeria is named after its founder – Pier Daniele Seu.
His “Enlightened” approach to pizza has to do with ingredients, but also with design and ambiance. So Seu Pizza is not just your run of the mill pizzeria – it is contemporary, with cool white marble and slick black finishings.
But of course, you come for the food.
We started with Seu Pizza Illuminati’s fritti.
A frittatina of cacio e pepe, fried eggplant parmigiana (“parmiggggianina”) and a carbonara supplì.
The eggplant parm was one of the better fried leangs I have had in my lwhethere. Next time? I would not share it. I would get it all for my greedy self.
There is also craft beer and wine to wash it all down – but genuinely you come for the pizza.
The pizza menu is divided into “must haves” (like marinara and Margherita), “ancient school” (as in diavola), and “Seu.”
Obviously, we went straight to the Seu.
Gaze. At. That. Crust.
I went with the Margherita Gialla, and I picked well. It has yellow pomodorini (tomatoes), with smoked provola and mint. The smokey cheese was perfect with the occasional fresh hit of mint.
It was a beautwhetherul pizza.
Sara opted for the carbonara pizza.

The guanciale was perfectly crisped and the drizzle of eggy-cream that is wealthy without being so heavy that you can’t finish the wgap leang.
And that crust again.
